Sherd the zucchini, squeeze some of the moisture out of it and put it in a large bowl. Cut the bell pepper in small squares and add that to the bowl too. Add the rest of the ingredients and mix very well, until everything is combined. Grease a muffin tin and fill the cups up to 2/3. You will have 16-18 muffins with this recipe. Bake in a preheted oven at 180 celcious or 350 fahrenheit for about 20-25 minutes. Repeat with the rest of the muffins until you don' t have any batter left!

- 2 cups shredded mixed cheese (edam, gouda, parmesan...)
- 1 cup feta cheese crumbles
- 1 cup greek yogourt
- 1 tablespoon baking powder
- 4 eggs
- 1 red bell pepper
- 1 large zucchini
- 1 tablespoon dry thyme
- 2 tablespoon chopped dill
- salt
